Today is the last day of school for Matt (and all of my other Springfield teacher friends)! Yay for summer! Can’t wait to spend the summer with my family. Yesterday I thought I would celebrate by making some cookies. Chocolate Chip Cheesecake Cookies. These are yummy…honestly they are not going to curb any sort of cheesecake craving I have, but they are soft and you can taste the cream cheese in them!
Chocolate Chip Cheesecake Cookies
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/8 teaspoon baking soda
10 tablespoons butter (1 stick plus 2 tablespoons)
1 cup sugar
4 ounces cream cheese
1 teaspoon vanilla
12 ounces chocolate chips
Additional sugar for coating
Preheat oven to 350.
Combine dry ingredients in a bowl and set aside. In mixer, blend butter, sugar, egg, cream cheese, and vanilla. Slowly add the dry ingredients, mixing with each addition, until all are incorporated. Stir in the chocolate chips.
Grease a cookie sheet. Roll dough into balls and coat in sugar. Place on prepared baking sheet, at least 1 inch apart.
Bake at 350 for 8-10 minutes. Do not over bake, you want the cookies to be soft so you can taste the cream cheese.
