These macaroons are extremely easy to make. I might even say easy enough for a 2 year old..Ean was a big help. Dump all of the ingredients in a bowl and clean up is minimal. They make a great addition if you need just a little something else for your dessert table.
3 cups flaked coconut lightly packed
2/3 cup sugar
1/3 cups of flour
1/ teaspoon salt
3 egg whites
1/2 teaspoon vanilla
1/4 cup of semisweet chocolate
1 teaspoon of vegetable oil
Preheat Oven to 325 f. Spray large cookie sheet with baking non stick spray. Mix coconut, sugar, flour, and salt in medium mixing bowl. Stir in egg whites and vanilla.
Drop tablespoon size of mixture about 2 inches apart onto prepared cookie sheet. Bake 25 minutes or until lightly brown on top. Remove macaroons from cookie sheet unto large serving plate or wax paper.
In a double boiler over low heat, melt chocolate and oil. Stir mixture until all the chocolate chips are melted. drizzle melted chocolate back a forth across macaroons. Cool in fridge for 15 minutes.
