Chocolate Chocolate Cupcakes

I hope you had a great weekend. I had the privilege of photographing the wedding of one of the most amazing couples I have ever met.  The weekend was full of wedding events…and it was wonderful. I am so happy for my sweet friends and a wonderful weekend, but my heart is also heavy for friends in Joplin, MO. Yesterday evening a tornado destroyed many parts of the city….praying for you all.
It seems a bit odd, to jump into a recipe, but I thought I would start this week off with Chocolate Chocolate Cupcakes.

Chocolate Cake Recipe from My Baking Addiction 
I love this recipe! It is my go to chocolate cupcake recipe! It is moist and delicious!
2 cups flour
2 cups sugar
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup unsweetened cocoa
1 cup oil
2 cups hot water
2 eggs
2 teaspoons vanilla
Preheat oven to 350 F. Line 24 muffin cups with liners. Mix ingredients with an electric mixer in a bowl until you get a thin batter. Pour batter into prepared muffin cups. Bake at 350 degrees until a toothpick inserted in the center comes out clean.
Chocolate Buttercream
1/2 cup vegetable shortening
1/2 cup (1 stick) butter, softened
3/4 cup cocoa
1 teaspoon clear vanilla extract
4 cups sifted confectioners’ sugar
3-4 tablespoons milk
In large bowl, cream shortening and butter with electric mixer. Add cocoa and vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.
