This week for small groups we had a pizza, all kinds of pizzas, homemade, Domino’s, mexican, dessert. My friend Erin made a delightful fruit pizza. I went the chocolate peanut butter route (I know you are really surprised), thinking ‘If it doesn’t get eaten at small groups, I know a couple of people who will enjoy this.’ I think this might have started out as a Pampered Chef recipe, but I can’t really find it anywhere…so I am not so sure. If you need something quick and extremely easy, this is a good one. The recipe is also nice because you can add as much or as little toppings as you like.
Chocolate Peanut Butter Pizza
1 Box Brownie Mix, prepared
1 8oz package cream cheese
1 cup brown sugar
1/3 cup peanut butter
12 regular Reese’s Peanut Butter Cups
1/2 Cup Peanuts
1/4 Cup Caramel Ice Cream Topping
Prepare brownies as directed. Pour into a jelly roll pan, I used my stoneware bar pan. Bake at 350 for about 17 minutes. Baking time will be a bit less than the box directions because you are using a larger pan. Remove from Oven and cool completely.
Beat cream cheese on medium speed until smooth. Add peanut butter and brown sugar until mixed completely. Spread evenly over cooled brownies.
Coarsely chop Reese’ and peanut separately. Sprinkle over brownies. Drizzle with caramel and enjoy.
