Surprise Cupcakes

Every time I make these cupcakes, I think of my best friend growing up. I think it was her mom who originally found the recipe. Both of our moms ended up making them and we loved them. They are easy, yummy and how can you go wrong with chocolate and cream cheese?

Surprise Cupcakes makes 2 1/2 dozen

1 8oz package cream cheese, softened

1 egg

1/3 cup sugar

8-10 ounces of chocolate chips

In a small bowl, blend cream cheese, egg and sugar. Beat until smooth. Add chocolate chips.

3 cups flour

2 cups sugar

1/2 cup cocoa

1 teaspoon salt

2 teaspoons baking soda

2/3 cup oil

2 cups water

2 tablespoons Vinegar

2 teaspoons vanilla

Preheat oven to 350 F. Line 24 standard muffin cups with liners. Sift together flour, sugar, cocoa, salt & soda in a large bowl. Add oil, water, vinegar and vanilla to dry ingredients and mix until smooth. Fill prepared pans 2/3 full and top with heaping teaspoon of filling. Bake at 350 for 20 -25 minutes.

  2. I am so glad you posted this! Kevin was asking if we had anything for dessert. We had all of the ingredients for this! We’ve got cupcakes in the oven now!!

    • Glad you are making them! That is another thing I love about them. I normally have the ingredients on hand too so they are a great last minute dessert. Hope Kevin got a good dessert fix. 🙂
