By ‘goodness’ I really mean ‘cookies’. Hypothetically, if you might be stuck in your house due to large amounts of snow for the next couple of days…chances are you have all of these ingredients in your cabinet.
Chocolate Peanut Butter Filled Cookies
Makes about 2 dozen
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup butter, softened
1/4 cup peanut butter
1 tablespoon milk
1 teaspoon vanilla extract
Peanut Butter Centers:
3/4 cup confectioners’ sugar
3/4 cup peanut butter
In small bowl blend flour, cocoa and baking soda. Mix until well blended.
In large bowl beat sugar, butter or margarine and 1/4 cup peanut butter, until light and fluffy. Add milk, vanilla and egg, beat. Stir in flour mixture until blended. Set aside.
To make peanut butter centers: Combine confectioner’s sugar and 3/4 cup peanut butter. Blend well.
Roll filling into 24 – 1 inch balls. I covered my hands with powdered sugar to make this process even easier…and a bit more sugar never hurt anyone right? For each cookie shape about 1 Tablespoon of dough around 1 peanut butter ball, covering completely. Place 2 inches apart on an ungreased cookie sheet.
Bake at 350 degrees F for 8 minutes. When cookies are done, they should be set and slightly cracked. Cool Completely.
Once cookies are cooled, I melted 3/4 cup chocolate chips and 2 tsp peanut butter and drizzled over cookies.
