Hot Chocolate Cupcakes

One of my favorite ways to warm up when it is so cold outside is with a cup of hot chocolate. It has been extremely cold (I guess I probably don’t need too reiterate that), so what better way to capture that flavor than with a cupcake?


Makes 6 jumbo cupcakes or 12 standard size

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

6 tablespoons unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

Preheat oven to 350. Line jumbo muffin pan with 6 cupcake liners.

In a medium bowl, combine flour, cocoa, baking soda and salt. In a large bowl, beat butter and sugar until smooth. Beat in eggs and vanilla until fluffy. On low speed, beat in dry ingredients alternating with milk, beginning and ending with dry ingredients. Fill prepared liners 2/3 full. Bake at 350 for 20 minutes or until center is set. Remove cupcakes from pan and let cool.


1/2 cup butter, softened

3 cups powdered sugar

1 teaspoon vanilla

1/2 tablespoon unsweetened cocoa powder

3 tablespoons milk

Beat butter on medium speed until creamy. Slowly beat in powdered sugar until smooth. Add vanilla, cocoa and milk until smooth.

If you have frosting left after sampling it for yourself, frost cupcakes and top mini marshmallows and chocolate shavings.

  1. Yummy! For Jordan’s birthday, I made the chocolate chip pumpkin ones you posted a few days back. He keeps asking when I’m going to make them again 🙂

    • Sadly no….BUT I made the chocolate muffin last night….I hardly think you can call it a muffin! I have a list for you guys that I need to get cracking on classic whoopie pies and the caramel cupcakes. 🙂 I was going to make the classic whoopies last night but I didn’t have all of the ingredients for the marshmallow filling.
