I love fruit. A lot. I don’t know if I could pick a favorite fruit but I would have to say strawberries would be somewhere near the very top. These muffins are packed full of strawberries. You can use frozen or fresh strawberries.
Strawberry Muffins
Makes 7 jumbo muffins or 14 standard muffins

1/4 cup vegtable oil
1/2 cup milk
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon cinnamon
3/4 cup white sugar
1/2 cup brown sugar
1 3/4 cups all-purpose flour
2 cups chopped strawberriesPreheat oven to 350 degrees F. Line 12 – 14 standard muffin pans with liners or 7 jumbo.

In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugars. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together. Fill muffin cups 2/3 full. Bake at 350 degrees F for 20- 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.
