I am surrounded by people who love the combination of peanut butter and chocolate. I am sure many of us who would classify ourselves as chocolate peanut butter lovers, or we know people who are. Chocolate and peanut butter are perfect together. Whatever camp you find yourself in, loving the combo yourself or having friends and family that do…this cupcake is for you.
Chocolate Peanut Butter Cupcakes
Chocolate Cupcakes. For the sake of time on this amazingly gorgeous day, I am just going to tell you, you need baked chocolate cupcakes. If you have some buttermilk in your refrigerator and want to make them from scratch, go for it. Or if you have a box of Duncan Hines in your cabinet. Whatever you pick…bake 2 dozen cupcakes and let them cool.
Peanut Butter Filling
4 Tablespoons butter, softened
1 1/2 cup peanut butter
1/4 cup milk
2 cups confectioners sugar
Beat butter and peanut butter until smooth. Add in milk and then confectioners sugar until creamy. Reserve 2 heaping tablespoons of filling to add to frosting. Scoop remaining peanut butter cream into a pastry bag and attach a round tip, I use a #12. Push tip through top of cupcake and fill.
Chocolate Peanut Butter Frosting
1 cup butter, softened
1 cup shortening
1/3 cup cocoa powder
3 tablespoons milk
2 teaspoons vanilla
Approximately 6 cups confectioners sugar
1 bag Bite Size Reese’s Peanut Butter Cups, unwrapped and chopped (the wrapper would really put a damper on the flavor)
Using a mixer beat butter and shortening in a large bowl until smooth. Add milk and vanilla and cocoa powder. Mix in reserved peanut butter cream. Finally beat in confectioners sugar until smooth. Spoon frosting into a pastry bag and pipe onto cupcakes. Top with chopped bite size Reese’s peanut butter cups. Enjoy.
